Eggs, where to find them



Many of us may have noticed that, when buying eggs in the UK, they are dirty. Since we are used to the eggs being washed before going on sale. It is interesting to know that this is not a bad thing but that it is done in order to protect our health.

Indeed,  eggs will stay fresher avoiding to wash them. By washing them, we drive some bacteria in through the pores of the shell, so it’s a bad idea to do so unless needed just before cooking as a general practice. This process takes away the cuticle.

Hens from British farms are vaccinated against salmonella and by keeping their cuticle intact there is no danger of internal contamination.

Another striking thing is the fact that eggs are not kept refrigerated in supermarkets since doing so would encourage the accumulation of condensation, between the supermarket and our home. Condensation would encourage mildew growth and contamination.

However, it is recommended to keep them in the fridge, once we reach our homes, since there is no danger of condensation.

Therefore, if you do not want to spend the day in the supermarket, looking for eggs, it is better that you know, beforehand, that you should look for them  among the non-refrigerated foods.
